Before you call BS on the mere concept of vegan Mexican food, try the coliflór frito at Gracias Madre. Sure the cheese is made from cashews, but let me tell you, it is damn good.
I am no where near being a vegan, but Gracias Madre is one of my favorite restaurants in LA. Healthy, authentic Mexican food, and located in a beautifully designed space.
